Steak Salad
Main Ingredients:
Steak
Egg
Butter or Olive Oil
Salad Components:
Mixed Greens (50/50 mix, or Arugula as an alternative)
Mini Tomatoes
Mandarins
Greek Yogurt (0% or 2%)
Sweet Potatoes
Seasonings:
Basil
Oregano
Trader Joe’s Green Goddess

Preheat the oven to 350°F. Insert a meat thermometer targeting an internal temperature of 117°F for the steak. Prepare the salad while the steak cooks (approximately 20 minutes).
As the steak nears 117°F, preheat a pan on high heat (level 8-10). Add butter or oil. You may start cooking the egg in a separate pan simultaneously.
For the sweet potatoes, pierce with a fork and microwave with a small amount of water for 5-6 minutes. Slice and add to the salad.
When the steak reaches 117°F, remove it from the oven and sear both sides in the hot pan for about 20-30 seconds each (adjust according to personal preference). Top the salad with the sliced steak and egg.

Main Components:
96/4 Lean Ground Beef
Egg
Olive Oil
Whole Wheat Pita or Tortillas
Toppings:
Cilantro or Arugula
Mini Tomatoes
Mandarins
Greek Yogurt (0% or 2%)
Mini Avocado
Seasonings/Sauces:
Basil
Oregano
Your Preferred Hot Sauce (e.g., Sabatino Truffle)
Timut Pepper
Heat a pan to medium-high and add olive oil. Cook the seasoned beef under a lid to retain moisture. Flip once juices run clear.
Meanwhile, chop the tomatoes, mandarins, and avocado, and set out the yogurt and greens.
Transfer the cooked beef to a serving dish. Use the same pan to warm and lightly crisp the tortillas or pitas.
Microwave the tortillas/pitas for about 60 seconds to soften, then briefly heat them in the pan with a little oil. Serve with egg if desired and assemble the tacos with the prepared toppings.
